Amy Luna Knox, MS, CNS, LDN
Hi, I’m Amy Knox.
I’m a weight-inclusive, clinical nutritionist based in southern Illinois, specializing in metabolic health concerns such as prediabetes, diabetes, PCOS, and perimenopause. My practice is grounded in a Health at Every Size® (HAES) framework, which means I support you in improving your health through sustainable nutrition strategies, without focusing solely on weight.
With a background in both integrative and evidence-based nutrition, I help women better understand their lab work, optimize blood sugar balance, and build consistent, realistic habits that align with their health goals and daily lives. Together, we focus on nutrient quality, meal rhythm, and targeted support to address the root causes of metabolic concerns, so you can feel more energized, resilient, and nourished.
I hold a master’s degree in Nutrition and Integrative Health from Maryland University of Integrative Health and a bachelor’s degree from the University of Tennessee-Knoxville. My career began in Washington, DC, where I worked in a farm-to-school program and an integrative healthcare practice, blending my passion for sustainable food systems with whole-person care.
After moving to the Midwest, I completed an organic farm apprenticeship that deepened my belief in the healing power of food and community. I now manage the community garden at Empowered Spaces in St. Louis and collaborate with programs like Jamaa Birth Village to improve access to fresh, organic food for families across the region.
When I’m not working, I enjoy life just outside St. Louis with my husband and our five-year-old daughter. I’m honored to serve this community and walk with clients as they care for their health, on their own terms, with evidence-based support and compassion at the center.

I believe every client deserves a tailored approach—one that honors their lived experience, health goals, and relationship with food. There’s no one-size-fits-all in nutrition, and healing doesn’t come from rigid rules or restriction.
Being well-nourished and emotionally satisfied by the food we eat can feel incredibly complex, especially in a world overflowing with conflicting messages about what and how we should eat. My role is to help quiet the noise and guide you back to a more grounded, connected relationship with food and your body.
As a clinical nutritionist, I draw from a wide range of tools including medical nutrition therapy, nutrition lab interpretation, behavior change science, and intuitive eating principles. Together, we explore strategies that support your body’s physiology and your emotional well-being, always in a way that’s flexible, respectful, and sustainable.
Whether you're navigating blood sugar concerns, hormone shifts, digestive discomfort, or simply trying to feel more at home in your body, we’ll work together to build a plan that feels doable and empowering in the season you’re in.
Philosophy
I believe that eating is a ritual of care.
Food is not just about fueling our bodies with energy and nutrients; it’s a vital way we connect with others. From family meals to dinners with friends, and sharing homemade favorites with those facing hard times, food brings us together. It allows us to celebrate and honor our backgrounds and those of others. As humans, we are naturally drawn to find joy in eating. That's why I believe good nutrition cannot be reduced to a list of dos and don’ts.
